Description
Variety: 100% large-berry sangiovese, from sustainable agriculture
Vineyard characteristics: 2004 plantings trained on guyot system with east/southeast exposure
Average density and soils: 6,500 vines/ha on soils of white clays and calcareous marls
Average production: 1.5 kg of grapes per plant (95 quintals/ha)
Harvest: manual harvest in the second decade of September
Vinification: de-stemmed grapes are not crushed and undergo semi-carbonic whole-berry maceration for 6 to 7 days, spontaneous fermentation takes place at controlled temperature in steel vats, followed by racking and malo-lactic fermentation
Aging: 9 months in steel and, after bottling, rests a minimum of 3 months in bottle
Color: bright ruby red
Nose: hints of berries, herbaceous notes and delicate plum scents
Taste: pleasant acidity and soft tannins facilitating smoothness, good savoriness
