Variety<\/strong>: 100% large-berry sangiovese, from sustainable agriculture<\/p>\n

Vineyard characteristics<\/strong>: 2004 plantings trained on guyot system with east\/southeast exposure<\/p>\n

Average density and soils:<\/strong> 6,500 vines\/ha on soils of white clays and calcareous marls<\/p>\n

Average production<\/strong>: 1.5 kg of grapes per plant (95 quintals\/ha)<\/p>\n

Harvest<\/strong>: manual harvest in the second decade of September<\/p>\n

Vinification<\/strong>: de-stemmed grapes are not crushed and undergo semi-carbonic whole-berry maceration for 6 to 7 days, spontaneous fermentation takes place at controlled temperature in steel vats, followed by racking and malo-lactic fermentation<\/p>\n

Aging<\/strong>: 9 months in steel and, after bottling, rests a minimum of 3 months in bottle<\/p>\n

Color<\/strong>: bright ruby red<\/p>\n

Nose<\/strong>: hints of berries, herbaceous notes and delicate plum scents<\/p>\n

Taste<\/strong>: pleasant acidity and soft tannins facilitating smoothness, good savoriness<\/p>\n
